Greece held a solid spot at the top of my bucket list for sometime but with each passing year the snooze button hits until the next stage of my life. Lucky for me, I can still have an authentic taste of Greece right here in Manila to tide me over until dreams become reality.
Here's the simple rundown on Souv, it's unpretentious and delicious. Chef Robby Goco doesn't get lost in the mechanics of overdoing any theme, he just brings you legit, unadulterated Greek food.
While I devoured the newly dropped menu my gratitude for artists and creators who pursue their passion dripped with every bite. I was feasting on some of the best Greek food of my life right here in our urban city of Manila. Manila really does have everthaaaaang!
Souv, short for Souvlaki which is a popular dish for the younger crowd in Greece, made up of grilled meats and vegetables wrapped in pita bread, inspired the new, young, bold menu. Chef Goco even hand carried the aluminum mugs from Greece this summer! Yes, I already asked and no, they are not for sale. While the Souv menu is hip and exciting, Goco's mature establishment, Cyma, still holds strong.
As mentioned earlier, Chef Robby is playful with the combinations bet there is nothing pretentious about it. The elements of pickling, lokal salts and grains plus fresh in-house bread carry themselves confidently. Souv is a place where you can indulge or safely stay in the confines of that awful thing called a 'diet'. Indulge on a simple meat platter for two, attempt the sticky wings or stay in the health zone with a faro salad and arugala greens. But please, promise me one thing, that you will order the fries with feta. Souv and Cyma are pretty much creameries, they make their own feta in house. It might make you a little sad next time you have to eat the blocks of feta from a store that could be very well mistaken for tofu. Not Goco's feta, that thing is a dairy cloud in a sky of blue. Soft white and creamy. It doesn't get better.
Paying credit where credit is due, let's discuss Goco's ability to make a cream sauce pero wala dairy! He is a culinary scientist who has cracked the code of olive oil. Smack in the middle of the image above you see a whole fish with what appears to be slathered in a cream sauce and nonchalantly covered with clams. That dish my friends contains absolutely no cream or dairy, it is all a concoction of olive and oil lemon cooked under the perfect conditions. The way in which Goco told us his development you could see his giddiness.
Not an exaggeration, I thought about this frozen greek yogurt our entire three week trip to Arizona. My mouth salivated as I imagined the insane combinations together. Again, a creamery, Souv makes their own fro-yo on site and it is the bomb! You guys, this combinations are so weird and they shouldn't even work but grabe, they are so sinfully delicious. To be honest, I don't feel guilty eating this it is yogurt after all.
All in all Souv is a place where hip millenials can dine (sorry guys, I will be there and most likely with all three of my kids), girl friends, families or just to stop in and pick up your favorite fro-yo. Souv really does have it all.
