Pilipino Pantry: Chicken Curry
It’s been too long since I shared a Pilipino Pantry recipe so excuse my absence and accept this post with loving arms. I’ve been feeling rather unmotivated in the kitchen but seized the moment on this particular day cooking with my boys in the kitchen. A friend recently taught me how to make my own bone broth so I had two jars waiting for me in the freezer, plus a drawer full of veggies and two very helpful boys, off we go!
Filipino Chicken Curry|
Last Christmas I bought each of the boys acrylic knives so they could help me in the kitchen. Lazada has something similar here.

Process|
PROCESS:
Sauté the onions in olive oil until see-through then add the potatoes and cook until soften.
Remove potatoes and add chicken drumsticks. Brown the drumsticks then remove and add the potatoes and remaining vegetables to the pan.
Sprinkle the curry powder and then add broth.
When all vegetables have soften add coconut cream and let simmer until half the liquid is absorbed.
Serve over rice.
INGREDIENTS:
1 Can Coconut Cream
1 Tbsp Curry Powder
1 Onion
3 Potatoes Cubed
3 Carrots Cubed
1 Zucchini Cubed
1 -2 Cups Of Chicken Broth
1/2 C Water
Salt And Pepper
Spring Onions For Garnish
For anyone curios this is the can of coconut cream I used. I don’t have a particular preference this is what I had on hand.
I used local brown rice from the Benguet region
